Loose Leaf Chinese 'Shui Xian' Oolong Tea
Shui Xian Oolong represents one of China's most distinguished tea varieties, originating from the Wuyi Mountains of Fujian Province. This tea delivers a sophisticated experience characterised by deep, mineral-forward notes with subtle floral undertones and a naturally sweet finish. The leaves unfurl to reveal a complex flavour profile that evolves across multiple infusions, making it ideal for traditional gongfu brewing or Western-style steeping. Rich in antioxidants and appreciated by tea connoisseurs for its depth and refinement, Shui Xian offers a contemplative tea experience that rewards careful preparation and attention to brewing technique.
Oolong tea is between green and black styles of tea, being fermented before drying like black tea but not as long.
Use about one quarter to one half teaspoon per cup and the purest boiled water you can. Ideally green tea is made with 85°C water rather than boiling. It is normally consumed without milk or sugar. Strength can be increased until the liquor becomes too bitter then reduce the amount used to achieve your ideal taste.
Green/black Tea contains caffeine but usually a bit less than a cup of coffee as far less tea leaves are used to make a cup. Store in an airtight container away from heat. Experiment by making with different temperatures 70°C to 90°C and brewing times (longer for lower temperatures) to explore the range of strength and flavours possible. Enjoy!
